The event served as a reminder of the importance of fostering connections and building relationships rooted in our shared passion for exceptional coffees and our commitment to transparency in every step of the way. As we approach the holiday season (which coincides with the beginning of our harvest season!), we are grateful for the opportunity to celebrate, learn, and share everything that NicaVio has to offer with both new and familiar faces. Our Quality team has been diligently sourcing the finest beans (of Maragogipe, Pacamara, Parainema, Sharshimor, and Red Catuai’s varieties) from our exceptional producers at Origin. They have also been exploring innovative roasting techniques to enhance the flavors of these beans. America's Specialty Selection, our premium roasted coffee brand, offers a range of options including light, medium, and dark roasts, as well as two distinctive processes: Honey and Natural.
The Honey process involves removing the pulp and fruit from the coffee cherry, leaving a thin layer of sticky mucilage. This imparts a balanced acidity, body, and intense fruit sweetness to the coffee. Additionally, honey processing requires less water compared to fully washed coffee and is less complex in terms of fermentation compared to the natural process.
On the other hand, the Natural process involves drying the coffee in the sun with the skin and flesh of the coffee fruit, known as the coffee "cherry," still intact. This method can result in fruity and complex flavors while reducing the levels of acidity and flavor intensity.

As we look towards 2024, we are also excited for the new arrivals which will include a vast reserve of Arabicas and Robusta. We will continue to share the additional processing variations such as Anaerobic Natural, Anaerobic Natural Carbonic Maceration Green Cherry, and Anaerobic Honey, among many others!
